onion powder

dried thyme

dried rosemary

Directions
Step 1
Preheat the oven to 325°F (165°C).
Step 2
In a small bowl, mix together salt, black pepper, garlic powder, onion powder, dried thyme, and dried rosemary.
Step 3
Rub the spice mixture all over the beef roast, covering all sides.
Step 4
Heat olive oil in a large oven-safe skillet or roasting pan over medium-high heat.
Step 5
Add the beef roast to the skillet or roasting pan and sear it on all sides until browned, about 5 minutes per side.
Step 6
Remove the beef roast from the skillet or roasting pan and set it aside.
Step 7
Deglaze the skillet or roasting pan with beef broth, scraping up any browned bits from the bottom.
Step 8
Return the beef roast to the skillet or roasting pan and pour the beef broth over it.
Step 9
Cover the skillet or roasting pan with foil and transfer it to the preheated oven.
Step 10
Roast the beef for 2 hours, or until it reaches your desired level of doneness.
Step 11
Remove the beef roast from the oven and let it rest for 15 minutes before slicing.
Step 12
While the beef is resting, make the gravy. In a small saucepan, heat the pan drippings from the skillet or roasting pan over medium heat.
Step 13
Add flour to the pan drippings and cook, stirring constantly, for 1-2 minutes to make a roux.
Step 14
Gradually whisk in beef broth until the gravy thickens to your desired consistency.
Step 15
Season the gravy with salt and black pepper to taste.
Step 16
Slice the beef roast and serve it with the gravy.
