Directions
Step 1
In a large pot, combine water, pickling salt, brown sugar, peppercorns, coriander seeds, mustard seeds, and bay leaves. Stir until the salt and sugar are dissolved.
Step 2
Place the beef brisket in the brine mixture, making sure it is fully submerged. Cover the pot and refrigerate for at least 24 hours.
Step 3
Remove the beef brisket from the brine and rinse it under cold water to remove excess salt. Place the brisket in a large pot and add enough water to cover it.
Step 4
Bring the water to a boil, then reduce the heat to low and simmer the brisket for 3-4 hours, or until it is fork-tender.
Step 5
While the brisket is cooking, prepare the cabbage, potatoes, and carrots. Cut the cabbage into wedges, peel and quarter the potatoes, and peel and chop the carrots.
Step 6
About 30 minutes before the brisket is done, add the cabbage, potatoes, and carrots to the pot. Cook until the vegetables are tender.
Step 7
Remove the brisket from the pot and let it rest for 10 minutes before slicing. Serve the sliced brisket with the cooked vegetables.
