apricot jam

soy sauce
4 cloves
garlic

Directions
Step 1
Preheat the oven to 350°F (175°C).
Step 2
In a small bowl, mix together the apricot jam, soy sauce, minced garlic, salt, and black pepper.
Step 3
Place the pork roast in a roasting pan and pour the apricot glaze mixture over it, spreading it evenly.
Step 4
Cover the roasting pan with foil and roast the pork for 1 hour.
Step 5
Remove the foil and continue roasting for another 30 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
Step 6
Remove the pork roast from the oven and let it rest for 10 minutes before slicing.
Step 7
Slice the pork roast and serve it with the remaining apricot glaze.
