Directions
Step 1
Bring a pot of water to a boil. Score a small 'X' on the bottom of each tomato. Carefully place the tomatoes into the boiling water and blanch for 1 minute. Remove the tomatoes from the boiling water and immediately transfer them to a bowl of ice water to cool. Once cooled, peel off the skin and remove the cores. Chop the tomatoes into small pieces.
Step 2
Heat olive oil in a large pot over medium heat. Add the chopped onions and minced garlic cloves. Sauté for 5 minutes until the onions are translucent and the garlic is fragrant.
Step 3
Add the chopped tomatoes, salt, and black pepper to the pot. Stir well and bring to a simmer. Cook for 15 minutes, stirring occasionally.
Step 4
Tear the stale bread into small pieces and add them to the pot. Stir well to combine. Cook for an additional 5 minutes to allow the bread to soak up the flavorful tomato broth.
Step 5
Remove the pot from the heat and let the soup cool slightly. Use an immersion blender or a regular blender to puree the soup until smooth and creamy.
Step 6
Return the pot to the heat and warm the soup over low heat for 5 minutes. Stir in the fresh basil leaves and season with additional salt and black pepper, if needed.
