Directions
Step 1
Preheat the oven to 375°F (190°C).
Step 2
Using a spiralizer, make zucchini noodles from the zucchini.
Step 3
In a large skillet, heat olive oil over medium heat. Add garlic and cook until fragrant.
Step 4
Add zucchini noodles to the skillet and cook for 2-3 minutes, until slightly softened.
Step 5
In a separate bowl, whisk together eggs, milk, salt, and black pepper.
Step 6
Grease a baking dish and layer half of the zucchini noodles. Pour half of the egg mixture over the noodles.
Step 7
Sprinkle half of the cheddar cheese, mozzarella cheese, and Parmesan cheese over the noodles.
Step 8
Repeat the layers with the remaining zucchini noodles, egg mixture, and cheeses.
Step 9
Cover the baking dish with foil and bake for 20 minutes.
Step 10
Remove the foil and bake for an additional 10 minutes, or until the cheese is golden and bubbly.
Step 11
Let the casserole cool for a few minutes before serving.
