Directions
Step 1
Heat a frying pan over medium heat and add olive oil.

Add the sliced onions to the pan and cook until caramelized, about 10 minutes.
Step 3
In a separate pan, cook the chorizo until browned and cooked through, about 8 minutes.
Step 4
In the same pan, fry the eggs to your desired doneness, about 3 minutes for sunny-side-up.
Step 5
Toast the burger buns until lightly browned.
Step 6
Assemble the burgers by placing a chorizo patty on the bottom bun, topping it with caramelized onions, fried egg, and the top bun.
