Directions
Step 1
Preheat the oven to 400°F (200°C).
Step 2
Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
Step 3
Chop the bell peppers and red onion into bite-sized pieces.
Step 4
In a large baking dish, toss the cauliflower rice, bell peppers, and red onion with olive oil, garlic, cumin, paprika, salt, and pepper.
Step 5
Roast in the preheated oven for 20 minutes, or until the vegetables are tender and slightly charred.
Step 6
In a small bowl, whisk together cilantro, lime juice, salt, and pepper to make the dressing.
Step 7
In serving bowls, divide the roasted cauliflower rice, black beans, and roasted vegetables.
Step 8
Drizzle the dressing over the bowls and serve.
