Directions
Step 1
In a large bowl, combine soy sauce, vinegar, minced garlic, black peppercorns, and bay leaves. Mix well.
Step 2
Add chicken thighs to the marinade and toss to coat. Let it marinate for at least 30 minutes, or overnight for best results.
Step 3
Heat a large skillet over medium-high heat. Remove chicken from the marinade, reserving the marinade.
Step 4
Add chicken thighs to the skillet and cook until browned on both sides, about 5 minutes per side.
Step 5
Pour the reserved marinade into the skillet and bring to a boil. Reduce heat to low, cover, and simmer for 25 minutes or until chicken is cooked through and tender.
Step 6
Remove bay leaves before serving. Serve hot with steamed rice.
