tzatziki sauce

Olive oil

Lemon juice
2 cloves
garlic

Dried Oregano
1 tsp
Salt

Black pepper
Directions
Step 1
In a bowl, mix olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to create a marinade.
Step 2
Place the lamb meat in a ziplock bag and pour the marinade over it. Seal the bag and massage the meat to ensure it is evenly coated. Marinate in the refrigerator for at least 2 hours, or overnight for best results.
Step 3
Preheat the grill to medium-high heat. Remove the lamb meat from the marinade and thread it onto skewers. Grill for 10-15 minutes per side, or until the internal temperature reaches 145°F (63°C) for medium-rare.
Step 4
Remove the meat from the skewers and let it rest for 5 minutes. Slice the meat thinly.
Step 5
Warm the pita bread on the grill or in a toaster. Assemble the gyros by placing a few slices of meat, tomato, red onion, and cucumber inside each pita bread. Drizzle with tzatziki sauce.
