Directions
Step 1
Grate the carrots, zucchini, and red bell pepper.
Step 2
Finely chop the onion and garlic cloves.
Step 3
In a large bowl, combine the grated vegetables, chopped onion, garlic, and chickpeas.
Step 4
Add the breadcrumbs, egg, salt, black pepper, cumin, and paprika to the bowl. Mix well.
Step 5
Form the mixture into patties of desired size.
Step 6
Heat olive oil in a pan over medium heat. Cook the patties for 3-4 minutes on each side, or until golden brown.
Step 7
Toast the burger buns.
Step 8
Assemble the burgers by placing a patty on each bun. Top with lettuce, tomato, pickles, mayonnaise, ketchup, and mustard.
