Directions
Step 1
Preheat the oven to 350°F (175°C).
Step 2
In a large bowl, combine the rolled oats, whole wheat flour, almond flour, baking powder, cinnamon, and salt.
Step 3
In a separate bowl, whisk together the coconut oil, honey, egg, and vanilla extract.
Step 4
Pour the wet ingredients into the dry ingredients and mix until well combined.
Step 5
Fold in the dried cranberries and chopped walnuts.
Step 6
Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
Step 7
Bake for 10-12 minutes, or until the edges are golden brown.
Step 8
Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
