Directions
Step 1
Peel and chop the carrots, potatoes, and onion.
Step 2
Mince the garlic cloves.
Step 3
Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic. Cook until the onion is translucent.
Step 4
Add the chopped carrots, potatoes, green beans, and peas to the pot. Stir well.
Step 5
Pour the vegetable broth into the pot. Season with salt, black pepper, and dried thyme. Stir well.
Step 6
Bring the soup to a boil. Reduce heat to low and let it simmer for 20 minutes or until the vegetables are tender.
Step 7
Remove the pot from heat. Use an immersion blender to blend the soup until smooth, or transfer the soup to a blender and blend in batches.
Step 8
Return the blended soup to the pot and heat over low heat until warmed through.
Step 9
Serve the mixed vegetable soup hot. Enjoy!
