Directions
Step 1
Preheat the oven to 350°F (175°C).
Step 2
In a large skillet, heat olive oil over medium heat. Add diced chicken breast and cook until no longer pink, about 5 minutes. Remove from heat and set aside.
Step 3
In the same skillet, add diced bell pepper, chopped onion, and minced garlic. Cook until vegetables are tender, about 5 minutes.
Step 4
In a large bowl, whisk together eggs, salt, and black pepper. Add cooked chicken and sautéed vegetables to the bowl and mix well.
Step 5
Pour the egg mixture into a greased baking dish. Bake in the preheated oven for 20-25 minutes, or until the frittata is set and golden brown on top.
Step 6
Remove from the oven and let it cool for a few minutes. Cut into slices and serve.
