Directions
Step 1
In a slow cooker, combine coconut milk, peanut butter, soy sauce, lime juice, brown sugar, minced garlic, grated ginger, red chili flakes, and salt. Mix well.
Step 2
Add chicken thighs to the slow cooker and coat them with the sauce.
Step 3
Cover the slow cooker and cook on low heat for 4 hours or until the chicken is cooked through and tender.
Step 4
Remove the chicken from the slow cooker and shred it using two forks.
Step 5
Return the shredded chicken to the slow cooker and mix it with the sauce.
Step 6
Serve the Slow Cooker Thai Peanut Chicken over rice or noodles, garnished with chopped cilantro and peanuts.
