Directions
Step 1
Rinse the quinoa under cold water.
Step 2
Chop the onion and mince the garlic.
Step 3
Heat olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened.
Step 4
Add the quinoa, chickpeas, tomatoes, vegetable broth, cumin, paprika, cayenne pepper, salt, and black pepper to the pot. Stir well.
Step 5
Cover the pot and simmer for 20 minutes, or until the quinoa is cooked and the stew has thickened.
Step 6
Serve the stew hot, garnished with fresh herbs if desired.
