Red Cabbage

onion
2 cloves
garlic
1 tsp
ground cumin
1 tsp
ground coriander
1 tsp
ground paprika
1 tsp
ground turmeric

vegetable broth
2 tbsp
apple cider vinegar
1 tsp
salt
1 tsp
black pepper
Directions
Step 1
Heat olive oil in a large skillet over medium heat.
Step 2
Add chopped onion and minced garlic to the skillet. Cook until the onion becomes translucent.
Step 3
In a small bowl, mix together ground cumin, ground coriander, ground paprika, and ground turmeric.
Step 4
Add the spice mixture to the skillet and cook for 1-2 minutes, until fragrant.
Step 5
Add the red cabbage to the skillet and stir to coat it with the spices.
Step 6
Pour vegetable broth and apple cider vinegar into the skillet. Season with salt and black pepper.
Step 7
Cover the skillet and let the cabbage simmer for 15-20 minutes, or until it becomes tender.
Step 8
While the cabbage is simmering, heat another skillet over high heat.
Step 9
Pat dry the scallops with a paper towel and season them with salt and black pepper.
Step 10
Add olive oil to the hot skillet and sear the scallops for 2-3 minutes on each side, until they develop a golden crust.
Step 11
Serve the spiced scallops on top of the braised red cabbage.
