Directions
Step 1
Preheat the oven to 425°F (220°C).

Season the steak with salt and pepper on both sides.
Step 3
Heat olive oil in a skillet over medium-high heat. Sear the steak for 2-3 minutes on each side.
Step 4
Transfer the steak to a baking sheet and roast in the oven for 10-15 minutes for medium-rare.
Step 5
While the steak is roasting, cut the potatoes into wedges and toss with olive oil, minced garlic, and rosemary.
Step 6
Spread the potatoes on a baking sheet and roast in the oven for 20-25 minutes until golden and crispy.
Step 7
Let the steak rest for a few minutes before slicing. Serve with the roasted potatoes.
