Directions
Step 1
Cut the chicken breasts into bite-sized pieces.
Step 2
Coat the chicken pieces in cornstarch.
Step 3
Heat vegetable oil in a pan and fry the chicken until golden and crispy.
Step 4
Remove the chicken from the pan and set aside.
Step 5
In the same pan, sauté the bell peppers and pineapple chunks until slightly softened.
Step 6
In a separate bowl, mix together white vinegar, ketchup, soy sauce, sugar, and salt to make the sweet and sour sauce.
Step 7
Add the sweet and sour sauce to the pan with the bell peppers and pineapple chunks.
Step 8
Return the fried chicken to the pan and toss to coat it in the sauce.
Step 9
Cook the white rice according to the package instructions.
Step 10
Serve the sweet and sour chicken over the cooked white rice.
