Directions
Step 1
Preheat the oven to 375°F (190°C).
Step 2
Cut the tops off the bell peppers and remove the seeds and membranes.
Step 3
In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
Step 4
Add the taco seasoning, black beans, and corn to the skillet with the ground beef. Cook for an additional 5 minutes, stirring occasionally.
Step 5
Fill each bell pepper with the ground beef mixture. Place the peppers in a baking dish and sprinkle with cheese.
Step 6
Bake in the preheated oven for 15-20 minutes, or until the peppers are tender and the cheese is melted and bubbly.
Step 7
Remove from the oven and let cool for a few minutes before serving.
