nutritional yeast

cornstarch

panko breadcrumbs
2 tbsp
vegan parmesan cheese
Directions
Step 1
Preheat the oven to 375°F (190°C).
Step 2
Steam the broccoli until tender, about 5 minutes. Set aside.
Step 3
In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
Step 4
Add the mushrooms to the skillet and cook until they release their moisture and become tender, about 5 minutes.
Step 5
In a blender, combine the coconut milk, nutritional yeast, cornstarch, salt, and black pepper. Blend until smooth.
Step 6
Add the blended sauce to the skillet with the mushrooms. Cook, stirring constantly, until the sauce thickens, about 2 minutes.
Step 7
In a large baking dish, combine the steamed broccoli and the mushroom sauce. Mix well to coat the broccoli evenly.
Step 8
In a small bowl, combine the panko breadcrumbs and vegan parmesan cheese. Sprinkle the breadcrumb mixture over the casserole.
Step 9
Bake the casserole in the preheated oven for 20 minutes, or until the breadcrumbs are golden brown.
Step 10
Remove from the oven and let cool for a few minutes before serving.
